Contrary to what is often claimed, we identify all basic flavors with our tongue buds. Many plants use bitter substances to protect themselves from hostile predators. For humans, most bitter substances are healthy, as long as they are natural <em>(!)<\/em>. They have for example a positive impact on the digestive system. Today, people tend to describe a coffee as bitter, when it simply has a balanced acidity <em>(provided that it has been prepared well).<\/em><\/p><p>The interplay of bitter and sweet components and a fine \u2013 w<em>ell-balanced<\/em> \u2013 acidity is what makes a coffee taste good in the first place. From the coffee cherry.<\/h4><p>Among other things, it produces caffeine and chlorogenic acid. The latter is perceived as bitter<em> (even though it is an acid)<\/em>. Its job is to reduce the stress level of the plant, that is for example caused by solar radiation. It has an antioxidative effect. <em>But back to the initial question.<\/em><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-16 elementor-top-column elementor-element elementor-element-73ea1d4\" data-id=\"73ea1d4\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap\">\n\t\t\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<section class=\"elementor-section elementor-top-section elementor-element elementor-element-a6f2375 elementor-section-boxed elementor-section-height-default elementor-section-height-default\" data-id=\"a6f2375\" data-element_type=\"section\" data-e-type=\"section\">\n\t\t\t\t\t\t<div class=\"elementor-container elementor-column-gap-default\">\n\t\t\t\t\t<div class=\"elementor-column elementor-col-16 elementor-top-column elementor-element elementor-element-f8e95ac\" data-id=\"f8e95ac\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap\">\n\t\t\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-66 elementor-top-column elementor-element elementor-element-53b2b90\" data-id=\"53b2b90\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-0f7cbac elementor-widget elementor-widget-text-editor\" data-id=\"0f7cbac\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<h4>2. The cause for bitter substances: The roasting.<\/h4>\n<em>During the roasting process the sugar in the coffee bean cells caramelizes.<\/em> This needs to be done with great care, because burned sugar tastes terrible. So, if the perfect roasting point is missed, a nice caramel flavor turns into <em>bitterness<\/em>.\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-16 elementor-top-column elementor-element elementor-element-3ddc229\" data-id=\"3ddc229\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap\">\n\t\t\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<section class=\"elementor-section elementor-top-section elementor-element elementor-element-e66c9f6 elementor-section-boxed elementor-section-height-default elementor-section-height-default\" data-id=\"e66c9f6\" data-element_type=\"section\" data-e-type=\"section\">\n\t\t\t\t\t\t<div class=\"elementor-container elementor-column-gap-default\">\n\t\t\t\t\t<div class=\"elementor-column elementor-col-16 elementor-top-column elementor-element elementor-element-6f8c2a0\" data-id=\"6f8c2a0\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap\">\n\t\t\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-66 elementor-top-column elementor-element elementor-element-b7cb40d\" data-id=\"b7cb40d\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-46011fe elementor-widget elementor-widget-text-editor\" data-id=\"46011fe\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<h4>3. Finally: The preparation.<\/h4><p><em>Even a perfectly roasted coffee can be easily ruined.<\/em> Just through over-extraction \u2013 which simply means: The water has extracted too many bitter substances from the ground coffee. <em>The reasons for that?<\/em><\/p><p><strong>\u2022 The water is too hot<\/strong><br \/>The ideal brewing temperature is between 198 and 205\u00b0F. So, not boiling anymore.<\/p><p><strong>\u2022 The grinding degree is too fine \u2013 or the grinding degree is not appropriate for the preparation method<\/strong><br \/>The finer the coffee grounds, the larger the surface area and the more substances can be extracted by the water. Which is also a matter of brew time. Quite logical, isn\u2019t it?<\/p><p>Thus, an espresso should be finely ground, because its contact time with water in the portafilter is quite short. A French press coffee on the other hand, is ground coarsely, because it has a rather long contact time with water.<\/p><p><strong>\u2022 Too much coffee grounds in proportion to the water<\/strong><br \/>The standard recipe, that should always turn out well, is: 2.1oz coffee grounds for 34fl oz water.
