berries are picked by hand.<\/strong> Green berries would not be aromatic; black berries \u2013 in other words, overripe berries \u2013 would taste foul. Such <em>\u201cwashed\u201d<\/em> coffees are of particularly high quality due to their nuanced, distinctive flavors. bacteria (microorganisms) convert types of sugar into energy and aromatic compounds.<\/em><\/li>\n \t<li><em>Microorganisms are already naturally present on the raw materials and are used in spontaneous fermentation, for instance (like wine, leaven).<\/em><\/li>\n \t<li><em>Coffee can \u2013 but doesn\u2019t have to \u2013 be After peeling and polishing they are again carefully selected by hand in order to sort out broken beans or foreign bodies, for example. beans are gently refined in drum roasters at just under 400\u00b0F for at least 11-14 minutes \u2013 unlike shock roasting in industrial processing.<\/strong><\/em><\/p><p>Only this way can they truly develop their complex flavors \u2013 o<em>f which, incidentally, there are over 800.<\/em> By the same token, over the course of this time-intensive process, fruit acids <em>(chlorogenic acids)<\/em> are broken down. Only the finely nuanced acids remain and give our coffee its unmistakable character. This is why we roast our espressos even longer \u2013 for at least for 14 minutes: it\u2019s what makes them so opulent, soft and spicy.<\/p><p>But the exact roasting time is always decided by the roast master who, thanks to his wealth of experience, can precisely determine the ideal time based on color, appearance and scent. <em>After all, extending or shortening the roasting period by just a few seconds can give rise to completely different bouquets from the very same green coffee.<\/em><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-16 elementor-top-column elementor-element elementor-element-3312495\" data-id=\"3312495\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap\">\n\t\t\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<\/div>\n\t\t","protected":false},"excerpt":{"rendered":"<p>You can taste the effort that has gone into making coffee.
