If the tannic acid adheres to these so-called mucins, their water solubility decreases and they fail &#8211; the natural lubrication fails and the mouth feels drier.*<\/em>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-2a53b054 elementor-widget elementor-widget-heading\" data-id=\"2a53b054\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Over-extracted? Badly roasted?<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-674d8d3 elementor-widget elementor-widget-text-editor\" data-id=\"674d8d3\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><strong>Tannins? <em>We know the term from tea or red wine, but not from coffee.<\/em><\/strong> In fact, coffee also contains tannins <em>(aka tannins)<\/em>, which come into play when:<\/p><ul><li><strong>The coffee has been over-extracted.<em> In other words, it has been ground too finely for the corresponding preparation method.<\/em><\/strong> It has steeped too long <em>(e.g. with the French press)<\/em>. Or brewed too hot <em>(over 203\u00b0F)<\/em>, as this makes the coffee very bitter. And then you always get a <em>\u201cdusty\u201d<\/em> feeling in your mouth <em>&#8211; it tastes awful.<\/em><\/li><li><strong>The coffee has not been roasted slowly and gently. <em>Which, by the way, cannot happen at Mount Hagen, because our organic coffees are refined very slowly and gently in drum roasters.<\/em><\/strong> This creates a perfect balance between, for example, chocolate-nut aromas, elegant bitterness, and refined acidity.
